Cool and Colorful: The Summer Pudding Experience
Summer pudding is a classic British dessert made with a mixture of berries, typically strawberries, raspberries, blackberries, and redcurrants. The fruits are encased in slices of white bread, which absorbs the juices and turns into a vibrant, fruity pudding when chilled. The result is a refreshing and colorful treat, perfect for summertime.
Ingredients:
- 500g mixed berries (strawberries, raspberries, blackberries, redcurrants)
- 150g granulated sugar
- 8-10 slices of white bread (crusts removed)
- 1 tablespoon water
Instructions:
1. Wash and prepare the berries, removing any stems or hulls.
2. In a saucepan, combine the berries, sugar, and water. Heat over medium heat until the sugar dissolves and the berries release their juices. Simmer for about 5-7 minutes until the fruits soften slightly. Allow the mixture to cool.
3. Line a pudding basin or bowl with the slices of bread, ensuring there are no gaps and allowing some to hang over the edges.
4. Pour the cooled berry mixture into the bread-lined bowl, making sure to include the juices.
5. Cover the top with more slices of bread, folding over the excess to seal the pudding.
6. Place a weight (such as a plate with a can on top) on the pudding to compress it. Refrigerate for at least 6 hours or overnight.
7. Before serving, run a knife around the edge of the pudding and invert it onto a serving plate.
8. Slice and serve the summer pudding chilled, optionally with whipped cream or vanilla ice cream.
