Phulkari Pulav: A Feast for the Senses

 Phulkari Pulav is a flavorful and aromatic Indian rice dish. It typically features basmati rice cooked with a medley of colorful vegetables, spices, and herbs. recipe for Phulkari Pulav:

Ingredients:                                                                    

-1 cup mixed vegetables (carrots, peas, bell pepper, etc)                                                                    -1 cup of basmati rice - 1 large onion, thinly sliced                                                                         

- 2 tomatoes, finely chopped - 2-3 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- A handful of fresh coriander leaves, chopped
- 2 tablespoons cooking oil
-salt to taste


Instructions:

1. Wash the basmati rice thoroughly and soak it in water for about 30 minutes. Then, cook the rice with the appropriate amount of water until it's almost done. Keep it aside.
2. In a pan, heat oil over medium heat. Add cumin seeds and let them splutter.
3. Add sliced onions and sauté until they turn golden brown.
4. Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
5. Add chopped tomatoes and cook until they become soft and the oil starts separating.
6. Now, add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well and cook for a couple of minutes.
7. Add the mixed vegetables and cook until they are slightly tender.
8. Add cooked rice to the vegetable mixture. Gently mix everything together, ensuring the rice is coated with the masala.
10. Once done, fluff the rice with a fork and serve hot. Enjoy your Phulkari Pulav!

9. Sprinkle garam masala and fresh coriander leaves over the rice. Cover the pan with a lid and let it simmer on low heat for a few minutes to allow the flavors to meld.
