"Govind Gatta Curry" is a traditional Indian dish made with gram flour (besan) dumplings cooked in a spiced yogurt-based curry. The dumplings, or "gatta," are typically seasoned with various spices, rolled into cylindrical shapes, and then boiled or steamed before being added to the curry. The curry is flavored with a blend of aromatic spices, yogurt, and sometimes tomato. It's a flavorful and hearty dish that showcases the rich culinary traditions of Rajasthan, India.

Ingredients:
For Gatta (Gram Flour Dumplings):
- 1 cup gram flour (besan)
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- Salt to taste
- Water (as needed)
For Curry:
- 1 cup yogurt, beaten
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon asafoetida (hing)
- 1 onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 2 tomatoes, pureed
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
1. Prepare Gatta:
- In a bowl, mix gram flour, turmeric powder, red chili powder, coriander powder, and salt.
- Gradually add water to form a smooth, firm dough.
- Divide the dough into small portions and roll them into cylindrical shapes.
- Boil or steam these dumplings until cooked. Cut them into bite-sized pieces.
2. Make Curry:
- Heat oil in a pan. Add cumin seeds, mustard seeds, and asafoetida.
- Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and cook for a minute.
- Add tomato puree, red chili powder, turmeric powder, coriander powder, and salt. Cook until the oil separates.
- Reduce the heat and slowly add beaten yogurt, stirring continuously to avoid curdling.
- Add garam masala and let the curry simmer for a few minutes.
3. Combine Gatta and Curry:
- Gently add the gatta pieces to the curry and let it simmer for 10-15 minutes until the dumplings absorb the flavors.
4. Garnish and Serve:
- Garnish with fresh coriander leaves.
- Serve hot with rice or Indian bread like chapati or naan.
